Com as comemorações de Páscoa chegando resolvi que queria uma receita de Challah diferente para embelezar a mesa, então desenvolvi essa aqui que fica extremamente aromática e macia, e agradará à todos nessa época com certeza. Você pode fazer assim modelado, trançado, ou inteiro na máquina, aliás como todos os pães que ensino aqui no blog. O Challah, ou no português Chalá, é um pão tradicional e sempre presente nas comemorações judaicas, mas que hoje se popularizou pelo mundo todo. (Ciclo Massa / Amassa / Pizza) Tamanho: 900g ou 1kg 1 xícara de água 1/4 de xícara de azeite 5 colheres de sopa de mel 1 ovo 1 colher de chá de sal 1 colher de sopa de alecrim seco ou fresco 4 e 1/2 xícaras de farinha de trigo 2 e 1/2 colheres de chá de fermento biológico seco Cobertura: 1 gema + 1 colher de sopa de mel Alecrim para decorar Coloque todos os ingredientes na forma da máquina, iniciando pelos líquidos, depois os secos e por último o fermento. Programe o ciclo que faz a mistura, sova, descanso e fermentação da massa e deixe até o final dele. Quando o ciclo terminar retire a massa, amasse um pouco para tirar o ar, separe em partes para trançar. Agora você decide como quer a trança, pode fazer uma trança com 3 partes até 6 partes, vai de sua habilidade. Divida a massa na quantidade de partes que deseja, faça rolinhos de mais ou menos 50cm de comprimento, dê uma leve enfarinhada neles e modele. Coloque em uma assadeira e deixe crescer até dobrar de volume, depois pincele com a mistura de gema e mel e leve para assar em forno pré-aquecido em 180º até ficar bem dourado. Quando sair do forno você pode pincelar com mais um pouco de mel e salpicar alecrim por cima, ou pode espetar raminhos de alecrim entre os trançados do pão. Vou deixar aqui dois links de vídeos que ensinam a fazer esse trançado igual ao meu da foto, esse AQUI e esse AQUI, mas se achar complicado faça uma trança simples de 3 partes que ficará lindíssimo também. Dicas: Se for assar todo na máquina sem modelar use o ciclo Básico/Normal ou Doce, pincele quando faltar cerca de 1 hora para o pão terminar.

I learned this recipe from my friend, Holly, who calls it Jennifer's Challah. The recipe doubles well. Bread keeps well in a ziplock bag on the counter for several days, and it freezes well, too. A few notes: You can use at least one cup of whole wheat flour or white whole wheat flour. (Holly always does.) To create lukewarm water: use ¼ cup boiling water and ¾ cup cold water, which will give you perfect lukewarm water. To create a warm place for your bread to rise: Heat your oven for 1 minute, then shut it off. It doesn’t matter what temperature you set it to when you heat it; the key is to only allow it to heat for 1 minute. This brief blast of heat will create a cozy, draft-free spot for your bread to rise. A double egg wash creates a beautifully golden and shiny finish to the challah. Baking on two sheet pans prevents the bottom of the challah from burning. As for shaping, there are lots of resources on youtube. I included one video below for making the entire challah, and a quick gif at the very start of the post, which shows how to shape the round challah.
