Beware, cute Calico cats are coming! This time they come as cookies (in three flavors: vanilla, coffee, and chocolate). This thin cookie is both cute and very easy to make too. By using the mini-chopper, all you need to do is putting the ingredients into the bowl of the chopper ^^. Not only that you don't have to wash a lot of the pieces of equipment, using the chopper has more benefits as it doesn't add too much air into the cookie dough so the cookie will stay in shape beautifully after baking. I like cats and have a load of cat shape cookie cutters, but you can use dog, bunny or etc., or any shape that you have it will be cute anyway. Add the egg and cold water. Process until a dough forms. Remove from the bowl. Press the dough with the palm of your hand until smooth. Cover and refrigerate for 30 minutes. Making chocolate cookie dough: Put the flour, icing sugar, and cocoa powder into a bowl of a mini-chopper. Process until combined. Add the butter and process to combine. Add the egg and cold water. Process until a dough forms. Remove from the bowl. Press the dough with the palm of your hand until smooth. Cover and refrigerate for 30 minutes. Roll the vanilla cookie dough between a sheet of baking paper. Place small balls of chocolate and coffee dough randomly. Roll with the rolling pin until the thickness of the dough is about 3 mm. Refrigerate for 30 minutes Do the same to the chocolate and coffee dough (or just roll the dough to 3 mm. thickness if you want). I use a Cat cookie cutter (3.5x8 cm). Cut the cookie dough with the cookie cutter. Place on a lined baking sheet. Refrigerate for 30 minutes. Before baking, preheat an oven to 170℃ Bake in 170℃ Preheated oven for 13-15 minutes Let the cookies cool completely on a wire rack. Calico cat cookies
