With work kicking into high gear along with hosting my direct reports for the annual team appreciation lunch at my house plus some other events, this week whirled by. I typically adorn with salami but thought pepperoni would be a nice touch along with a bit of Basil Vinaigrette. The combination was delicious. They can be made ahead of time and kept in an air tight container then simply arrange on a platter or plate and enjoy. You can drizzle the basil vinaigrette or serve on the side – you choose. The recipe is a bit loose and I am sharing for 24 skewers plus the vinaigrette. Just curious to learn about the various ways that you have made these little nibbles. Pepperoni Caprese Bites with Basil Vinaigrette Makes 24 24 Mini Mozzarella Balls 24 Basil Leaves 24 Slices of Pepperoni 24 Small Cherry Tomatoes 24 Toothpicks Thread the mozzarella ball first then fold the pepperoni in half and half again and thread onto the toothpick. Next add the basil leaf then the tomato. Basil Vinaigrette 1/3 Cup Olive Oil 1 Tablespoon White Balsamic Vinegar ¼ teaspoon Garlic Powder 1 Scallion, finely minced 6 Basil leaves, chopped fine Pinch of salt 6 Grinds of Black Pepper In a medium glass jar, add all of the above ingredients and shake well. Let sit at least 30 minutes to let the flavors develop.
Vegetarian Sweet Potato Canapes are bursting with flavours of garlic and smoked paprika! The beauty of these canapes is that it requires very little hands-on time and no decorating skills. What’s old is new again. The classics have timeless appeal. They are forever favorites, often simple in preparation but loaded with flavor. When I was a kid, my mom would make these parmesan onion toasts that I could never get enough of. Although I was never a huge fan of mayonnaise, I did not seem to mind it in these little appetizers. She would make the parmesan onion mixture and slather on a those little rye breads and bake in the oven until bubbly. Other times it would be on white bread, but always bubbly. They were one of those treats that came around every once in a while and when they did, good time were had by all. (Click "Read More" below to continue post) My Aunt Mary would often make these too. She called them her little supremes. Supreme was one of her favorite words. A year ago I took my Aunt to lunch to catch up and she had just turned 94. When we got into the car, she exclaimed that she just got her drivers license renewed and was quite proud. I was the driver for the day, although I am sure we would have gotten to the restaurant just fine. Aunt Mary had given me her handicap placard to use for us to park close. I was a bit trepidatious to use since I wasn’t the person needing it, but I knew it would highly benefit her. However, when we pulled up, there were 5 handicap parking spots that were all taken. Thus I said, I will drop you here and park really quick then come get you. Once I parked and got to her, a very nice gentleman a bit younger than me was escorting her to the door. I thanked him and we proceed to get seated at our table. Once we sat down, got our drinks and pursued the menu, my Aunt said to me – “I’ve still got it”. I smiled. I have been thinking about these little treats for sometime and thought they would be a perfect Friday Night Bite. A bit of nostalgia on a plate and a glass of cabernet in my hand – here’s a toast to my Mom and Aunt! Parmesan Onion Canapés ¾ Cup Onion, finely minced 1 Tablespoon Sour Cream 2 Tablespoon Mayonnaise 1/3 Cup Grated Parmesan Cheese Smoked Paprika 5 to 6 Sliced Firm White Bread Preheat oven to 400 degrees. In a mixing bowl add the onion, sour cream, mayonnaise and parmesan cheese and mix well. Use a 1 ½ inch round cookie cutter and cut 24 rounds from the bread. Lay on a cookie sheet. Top each one with a teaspoon of the onion mixture and sprinkle with a touch of the smoked paprika on top of each. Bake for 8 to 12 minutes or until golden brown and bubbly. Remove from the oven and let cool for a minute before enjoying.

Estos son unos pequeños aperitivos muy italianos y que hago con bastante frecuencia en mi casa. Se pueden rellenar con muchos tipos de ingredientes. Os dejaré algunos de los que suelo hacer. Son muy socorridos pues en general a todos les gustan estos pequeños sándwiches italianos tan rápidos y ricos. Siempre se hacen con pan de molde sin corteza, cuando decimos poner mayonesa es solo un ligero velo, pero sin embargo van muy rellenos. Los primeros que aparecen en la imagen son uno de los últimos que hice para un aperitivo. Os dejo la receta de como se hace el tomate confitado ya que se usa mucho en algunos tramezzini y en muchas recetas italianas. 500 gramos de tomates cherry 2 cucharadas de azúcar 2 o 3 hojas de albahaca sal 30 minutos al horno a 200 grados 1. Tramezzino de Tomate & Queso Pan de molde sin corteza; se unta mayonesa en cada uno de las rebanadas de pan y pones a continuación una loncha de queso tipo Havarti; cortas unas rodajitas de tomate rojo muy fino (se ponen dos o tres trozos de tomate por tramezzino). Está deliciosa esta combinación, os lo aseguro. 2. Tramezzino con Jamón Pan de molde, mayonesa, jamón de york (dulce), queso en lonchas tipo Havarti y pepinillos en vinagre 3. Hard to believe that it was a week ago that I debuted my new series – Friday Night Bites. Time just goes by way too fast. I am excited to share my second installment of this fun series. A Crostini is one of my all time favorite appetizers. With the pure simplicity and endless possibilities of toppings, it is the perfect appetizer. A two to three bite wonder. If you are busy person like me and work 50 to 60 hours per week, a Crostini is a simple appetizer that you can throw together in no time. You can almost shop your refrigerator and pantry to come up with a creative Crostini. Last Friday we ended up having guests join us for our tradition. We enjoyed a cheese platter and multiple bottles of wine. It was an impromptu gathering, so I shopped the refrigerator and pantry for the cheese platter ingredients. I realized later that I had all of the ingredients for this Roasted Tomato Burrata Crostini but with my time constraints getting home late from work and the guests had already arrived, it would not have been feasible. I did however make it over the weekend and enjoyed each bite. A few months ago I attended the SF Chefs event in San Francisco and went to the Sommeliers Blind Tasting Seminar. Essentially there were three master sommeliers at the front of the class who evaluated each wine and put their best guess out to the group. My friend and I would guess along with them and actually correctly identified 5 out of 6 of the wines. I have to admit that my friend is in the wine business but I was holding my own. Smile. One of the wines that we tasted was Nipozzano Riserva Chianit Rufina DOCG 2008 from Castello di Nipozzano. With the Italian flair of the Crostini, I thought this wine would be a perfect pairing. It hosts a deep purplish color. The nose envokes scents of sour cherry, raspberry and dried plum. Next you experience an aroma of black pepper, vanilla, cocoa powder and espresso bean. The finish is smooth and endless and extremely well balanced. A winning choice! Hope that you enjoy this Friday Night Bite and wine pairing! Roasted Tomato Burrata Crostini Makes 12 Baguette, 12 half inch slices Olive oil Salt Pepper 2 Garlic cloves Pesto (see recipe below or use store bought) Burrata 12 Grape tomatoes Roasted Tomatoes Preheat the oven to 350 degrees. Cut each grape tomato in half and place onto a baking sheet cut side up. Drizzle with olive oil and sprinkle with salt and pepper. Bake for about 20 to 30 minutes. Remove and let cool. Crostini To make the Crostini, slice the baguette into 12 slices that are about ½ inch thick. Brush each side with olive oil. Place onto a cookie sheet and bake for about 10 minutes at 350 degrees. Check to make sure they do not get too dark. Should be golden brown on both sides. Flip at 5 minutes to ensure even cooking. Remove from the oven and rub the raw garlic clove on the top of each Crostini. Assembly To assemble cut about a tablespoon of the burrata and spread onto each Crostini. Next spoon about 1 to 2 teaspoons of pesto on top of the burrata. Add 2 of the tomato halves on top of the pesto. Sprinkle with a touch of salt. Serve immediately and enjoy!! Basil Pesto Sauce 2 C. Fresh basil leaves, packed tightly ½ C. Parmesan cheese, freshly grated 1/3 C. Pine nuts, toasted ½ C. Olive oil 3 Garlic cloves, smashed Salt and pepper to taste Use a food processor to make this sauce. Simply add the basil leaves, parmesan cheese, pine nuts and garlic cloves. Pulse for 10 seconds and then slowly pour the olive oil into the mixture while food processor is on. Continue to pulse until the mixture is smooth. Taste and then season with salt and pepper. Place into an airtight container immediately so the bright green color remains. Refrigerate until ready to use.
