Ao domingo havia sempre bolo e o de laranja era o mais repetido. Principalmente nesta altura do ano, quando as laranjeiras estavam carregadas de fruta. O cheiro que ficava na cozinha, depois do bolo ter saído do forno, era algo de maravilhoso e fazia despertar os sentidos. Ainda hoje guardo na memória esse cheiro do bolo de laranja acabado de fazer e que eu aguardava impacientemente que arrefecesse. A gula impedia essa espera e o bolo acabava por ser cortado e saboreado ainda morno. E que bem que sabia! A laranjeira, que era enorme, estava ali mesmo ao lado da casa, junto ao poço. Havia sido plantada há muitos anos atrás pelo meu avô. Lembro-me de as laranjas serem bem doces e sumarentas. Eram as melhores lá do quintal. A tarefa de apanhar as laranjas estava por minha conta. Auxiliando-me de uma cana comprida, escolhia sempre as mais altas, aquelas que apanhavam mais sol e por isso eram mais doces. Não resistia a comer uma ou duas, ali mesmo. As restantes eram entregues à minha mãe que se encarregava de dar andamento à receita. Eu já só esperava que o bolo saísse do forno. É talvez dos meus bolos preferidos, o de laranja. É daqueles sabores de infância que guardo com carinho. Não resisto, sempre que posso, a experimentar novas receitas de bolo de laranja. A versão de hoje nada tem a ver com o bolo da minha infância, mas este bolo é tão bom que a receita merece ser partilhada. E o melhor de tudo é que nem sequer leva farinha e é por isso isento de glúten. A receita é fácil e o resultado é maravilhoso. Um bolo simples, húmido e com um equilíbrio perfeito de sabores entre a laranja e a amêndoa, perfumado pelas notas adocicadas das especiarias que facilmente nos leva a querer uma segunda fatia. Perfeito para trocar dois dedos de conversa enquanto saboreamos uma chávena de chá. E vocês, já sabem que bolo vão fazer este fim de semana?! Bolo de Laranja, Amêndoa e Especiarias Ingredientes: | 4 laranjas médias | 5 ovos | 200 g de açúcar amarelo | 250 g de amêndoa moída | 2 c. (chá) de mistura de especiarias (canela, cardamomo, cravinho, gengibre, noz moscada, etc) | mel ou Maple Syrup para pincelar | pistácios para servir Preparação: 1 . Coloque as laranjas inteiras num tacho, cubra-as com água e deixe levantar fervura. Coza as laranjas durante 25-30 minutos. Passado esse tempo, retire as laranjas e deixe arrefecer um pouco. Coloque as laranjas num processador de alimentos e triture durante 1-2 minutos até obter um puré bem cremoso. 2 . Pré-aqueça o forno a 180ºC. Unte com óleo vegetal e forre com papel vegetal uma forma redonda de aro amovível com cerca de 24cm. Reserve. 3 . Separe as gemas das claras e bata as gemas com metade do açúcar até obter um creme fofo e esbranquiçado. 4 . À parte bata as claras, junte a outra metade do açúcar e bata até que fiquem bem firmes. 5 . Adicione o puré de laranja à mistura das gemas e envolva. Junte a amêndoa moída e as especiarias e volte a envolver. 6 . Adicione 1/4 das claras ao preparado anterior e misture. Aos poucos vá adicionando as restantes claras e envolva em movimentos circulares e sem bater, para que as claras não percam o ar. 7 . Verta a massa na forma reservada e leve ao forno cerca de 55-60 minutos. Faça o teste do palito antes de retirar o bolo do forno. 8 . Retire o bolo do forno e deixe arrefecer um pouco na forma. Desenforme, pincele com mel ou Maple Syrup e deixe arrefecer completamente sobre uma grelha. Sirva o bolo com rodelas de laranja, pistácios e um fio de mel.
