Space - Fluffy Cotton Candy Cupcakes Ingredients: For the cupcakes: 1 ½ cups all-purpose flour 1 ½ teaspoons baking powder ¼ teaspoon salt ½ cup unsalted butter, at room temperature 1 cup granulated sugar 2 large eggs 1 teaspoon vanilla extract ½ cup whole milk 1 teaspoon cotton candy flavoring (you can find this at specialty stores or online) For the cotton candy frosting: 1 cup unsalted butter, at room temperature 4 cups powdered sugar 2 teaspoons cotton candy flavoring 2-3 tablespoons milk (or as needed) Pink or blue food coloring (optional, for a fun touch) Instructions: For the cupcakes: Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. Cream the butter and sugar: In a large mixing bowl, cream together the butter and sugar until light and fluffy (about 3-4 minutes). Add eggs and vanilla: Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract. Alternate adding the dry ingredients and milk: Add the flour mixture in three parts, alternating with the milk in two parts. Begin and end with the flour mixture. Mix until just combined. Add cotton candy flavoring: Stir in the cotton candy flavoring until evenly mixed. This will give the cupcakes that signature cotton candy taste. Fill the cupcake liners: Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake: Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. For the frosting: Cream the butter: In a large bowl, beat the butter until creamy and smooth. Add powdered sugar: Gradually add the powdered sugar, one cup at a time, beating on low speed until combined, then increasing the speed to medium-high. Beat until light and fluffy (about 4-5 minutes). Add cotton candy flavoring: Mix in the cotton candy flavoring and 2 tablespoons of milk. If the frosting is too thick, add the remaining tablespoon of milk to achieve a smooth, spreadable consistency. Color the frosting (optional): If you want to add color, mix in a few drops of pink or blue food coloring to give the frosting a fun, vibrant look. Frost the cupcakes: Once the cupcakes are completely cool, spread or pipe the frosting onto each cupcake. Garnish (Optional): To make them even more fun, top the cupcakes with a small piece of cotton candy on top for a whimsical touch
