These are those thick, spongy American pancakes that are often eaten with warm maple syrup and crisp fried bacon. I love them with the syrup alone, but if you do want bacon, I think streaky is best. You can easily cook these pancakes by dolloping the batter onto a hot griddle (smooth, not ridged, side) or heavy based pan. For US cup measures, use the toggle at the top of the ingredients list.

Pan-fried buns filled with a delicious filling of cabbage, vermicelli noodles, and other veggies. All wrapped in some homemade dough before being pan-fried until golden brown and crisp then cooked in a steam to get that nice crisp exterior but chewy inside. These are inspired by my favourite buns from the food stalls and night markets in Taipei. I’d pack a dozen in my suitcase and freeze it when I get back home, and they’d still be soo good! These can of course be frozen and reheated too for whenever you’re craving some buns!

Did you know that Suzanne and I have Dutch ancestry? In fact Suzanne's husband is a Dutch guy. He can even speak the language (Suzanne and I can't.) Even though we don't speak it, we like to eat it. Dutch baking that is. Yum! Dutch Boterkoek 2/3 cup soft butter 1 cup sugar 1 1/2 tsp. almond extract 1 egg 1 1/2 cups flour 1/2 tsp baking powder Mix the butter, sugar, almond extract and egg well. Add the flour and baking powder. Spread into a greased 9 inch round baking pan (can be a pie plate if that's what you have.) Bake at 350 degrees F for 30 minutes. Cool, then cut into 12 wedges. Enjoy! Yes, they are totally posing for me. And loving it!

"Introducing winter's ultimate all-in-one meal - cob loaf filled with a mouth-watering slow-cooked beef casserole. Topped with cheesy, garlicky, crispy croutons, this is a real game changer" – Michelle Southan
I’ve only ever eaten Dutch babies in the States, where they are brought out to you at the table with great pomp: great pancakes puffed up and golden, still in the cast-iron skillets they were cooked in. Obviously, I had to make my own at home. Not being a restaurant, I don’t want to be juggling with heavy pans, giving each person their own, so I’ve made mine a giant one for sharing; this ain’t no baby, that’s for sure. The "Dutch" of the title doesn't in fact refer to Holland, or anything to do with that country, but rather owes its name to the fact that this particular pancake comes from the German-American community known as the Pennsylvania Dutch and would originally have been served with melted butter, sugar and lemon, and indeed they often still are. While you can, of course, serve this mega-pancake just sprinkled with granulated sugar and lemon juice or, for a more diner taste, with a side order of bacon and maple syrup, I like it tumbled with berries and dusted with icing sugar with a bowl of creme fraiche within arm’s reach. I confess, I also add an ooze of maple syrup as I eat. For US cup measures, use the toggle at the top of the ingredients list.
