An Australian treat, sponge cake rectangle-shaped bars are coated on all sides with a chocolate icing and then coated with sweetened shredded (desiccated) coconut. Lamingtons 1 cup butter 1 cup granulated sugar 4 large eggs (beaten) 2 cups self raising flour* Icing: 2 cups powdered sugar 2 tablespoons baking cocoa 1 tablespoon boiling water 1 teaspoon vanilla extract 1 1/2 cups sweetened shredded (desiccated) or flaked coconut Preheat oven to 350°F (175°C). Grease a 13 x 9 x 2-inch pan and set aside. Cream butter and sugar, gradually add the eggs and mix well. Add 1/3 cup of flour at a time, stirring gently and thoroughly after each addition. Place batter in pan and bake for 1 to 1 1/4 hours, decreasing the temperature to 325°F (160°C) after 30 minutes. Place on a rack to cool. For Icing: Sift powdered sugar into a bowl, add boiling water and vanilla to baking cocoa and stir into powdered sugar, beat well. Cut cooled cake into 24 rectangular-shaped bars and ice on all sides. This is best done using a pair of tongs and dipping the cake into the icing mixture, then roll the iced cake in the coconut, coating well. Allow to dry on a rack. *Or you may substitute with 2 cups all purpose flour, 2 teaspoons baking powder and 1 teaspoon salt. Makes 24 bars.

We wanted a rich and creamy custard that wasn't too sweet, so we could fully enjoy the signature crunchy layer of caramelized sugar on top. By only using egg yolks, we achieved a soft and creamy texture. We tried using milk and half-and-half but, in the end, we landed with heavy cream for its richness. Whole vanilla beans give a more intense, pure vanilla flavor that you can't get from extract. We also like seeing the vanilla seeds flecked throughout the custard.

Replacing the water with coffee and booze. I use my Nespresso machine to make espresso, which I add water to to make 1 cup. If you don't feel like adding booze or coffee, simply use 1 cup plus 2 tablespoons boiling water instead. Upped the vanilla. Added salt.

The cheesecake layer needs about 3 hours to bake and cool, and at least 6 hours to freeze, so plan in advance; preferably make it a day ahead. The assembled kanafeh cheesecake, needs about 4 hours to defrost before serving, so plan to assemble it about 6 hours before you plan to serve it. If you prefer a thinner layer of cheesecake, for the kanafeh to take center stage, you could halve the cheesecake recipe. Baking time will need to be reduced to about 45 minutes. The syrup amount makes enough to soak the kanafeh, plus extra for drizzling on individual servings.
