Halloween has come and gone. I was all geared up for Halloween this year because the hubby was going to hand out treats while I relaxed in front of a scary movie. Such a great plan, right? Well, the weather turned wicked on Halloween! Pumpkins were dusted in snow, there were snow squalls and winds up to 70mph. At least the snow is gone for now, unlike the upper North East and mountain areas of the south. So sorry... But, time to move on to Novemember! Time for being with family and friends. Time to get cozy by the fire. Here's a quick little appetizer you can whip up in a pinch regardless of whether the winds are whipping around in your neck of the woods. Raspberry Brie Tartlets are great for a last minute get together or as an awesome appetizer at Thanksgiving! These delicious, little tartlets only need 4 ingredients and can be made in minutes! Ingredients: 2 pkgs mini phyllo shells 1 8oz pkg Brie cheese, cut up into small pieces 1/4 cup raspberry jam (seedless) 1 pkg walnut chips Directions: Preheat oven to 350 degrees. Place mini phyllo shells on a baking sheet. Place wedges of brie in each shell. Bake 5 minutes or until cheese starts to melt. Remove from oven and place a dollop of raspberry jam and a sprinkling of walnut chips onto each brie bite. Don't you just want to pop one in your mouth? The brie is warm and gooey topped with the sweetness from the raspberry jam. The sprinkling of walnut chips finishes these bite size tartlets off. There's a total party going on!
