Whether you're a seasoned baker or just starting out, homemade shortbread is a delightful treat perfect for tea time, dessert, or gifting. Ingredients: 1 cup (2 sticks) unsalted butter, at room temperature ½ cup powdered sugar 2 cups all-purpose flour ¼ teaspoon salt (omit if using salted butter) 1 teaspoon vanilla extract (optional) Instructions: 1. Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper or use a shortbread pan. 2. Cream the butter and sugar together in a large bowl until light and fluffy. This can be done using a hand mixer or stand mixer on medium speed. 3. Add flour and salt to the mixture, blending slowly until the dough begins to come together. If using vanilla extract, add it now. 4. Shape the dough. You can roll the dough out to about ½ inch thick and cut it into traditional rectangles or use cookie cutters for fun shapes. Alternatively, press the dough into a pan and score it with a knife before baking. 5. Bake for 18–22 minutes, or until the edges are just starting to turn golden. Be careful not to overbake—shortbread should be pale and tender. 6. Cool completely on a wire rack. The shortbread will firm up as it cools. 7. Optional: Dust with powdered sugar for a classic finish. Tips: For extra flavor, consider adding lemon zest, chopped nuts, or dipping one end in chocolate. Store in an airtight container for up to a week—or freeze for longer shelf life.
