Este festival de (bom) pão continua amanhã com mais um post, desta vez com uma receita de pão saloio. Obrigada Ana, mais uma vez, pela participação, de certeza que quem visita este blog irá ficar tentado por estas receitas! Pão Bijou adaptado para a Bimby “Casa onde não há Pão, todos ralham e ninguém tem razão” Casa onde não há Pão, todos ralham e ninguém tem razão. Assim diz o ditado popular. Ditado este que ouço desde miúda. Contudo, a Guerra chegou a nossa casa: migalhas, migalhinhas, como combatê-las? Falo, claro está, de migalhas com glúten. Felizmente, estava uma fantástica receita, já anteriormente publicada neste blog, à espera de sair da minha “pasta das receitas a experimentar”. Simples, prática, com poucos ingredientes e fáceis de encontrar. Adaptei-a à Bimby para facilitar ainda mais. Desde então que não entram na nossa mesa as malfadadas migalhinhas de pão com glúten. E ouço diariamente: Pão… Pão mamã! Agrada a celíacos e não celíacos. Motivo: crocante, estaladiço, branquinho e sem sabor a ázimo. Ingredientes: 14 gramas de fermento seco activo (Doves Farm Quick Yeast)* 600 ml de água gaseificada (Lidl)** 1 1/2 colher de chá de sal marinho (9 gr) 530 gramas de farinha panificável sem glúten (Mix B Shar) 1 clara de ovo M levemente batida com uma colher de sopa de água *Se conseguir condições ótimas de levedação e deixar levedar por 40 minutos, e não 20, poderá usar apenas 7 g de fermento. ** Se diminuir na quantidade da água (ex. 580 ml) obterá bolinhas mais altas e com mais miolo. No copo da Bimby junte o fermento (14 gr) e a água gaseificada (600 ml). Para ativar o fermento programe 3 minutos / 37º C / velocidade 1. Verifique se externamente o copo da Bimby está morno. Caso não esteja, repita o programa anterior mais um minuto. Deixe descansar por cinco minutos ou até que espume, cubra durante este tempo a máquina com uma manta polar. Acrescente depois a farinha (530 gr) e o sal (9 gr). Amasse durante cinco minutos: Programa “massa”. Deixe levedar durante 20 minutos ou até a massa duplicar o seu volume. Para o efeito abafe a Bimby. Use por exemplo uma manta polar coberta com 4 sacos de plástico justos, uma segunda manta polar e um saco extra a envolver tudo. Findo esse tempo, pré-aqueça o forno a 210º C. A massa, que deverá ter a consistência de um creme espesso, deverá ser colocada em colheradas generosas no tapete de silicone. Aproveite e faça neste momento o seu fermento caseiro usando uma colher de sopa desta massa. Modele as colheradas de massa com o pincel molhado na mistura de clara de ovo e água até ficarem redondas. Leve ao forno na prateleira do meio e ponha 4 cubos de gelo no tabuleiro do fundo. Coza por 20 minutos, a 210º C. Vigie. Em caso de os pães começarem a ficar logo de início muito corados cubra com papel de alumínio. Passado esse tempo, reduza para 180º C e coloque mais 4 cubos de gelo no tabuleiro do fundo. Deixe cozer por mais 15 minutos. A crosta deve ficar dourada e sólida. Deixe arrefecer numa rede para bolos antes de fatiar ou delicie-se com um pãozinho morninho acabado de sair do forno. Bom apetite! Nota: Se desejar pode incorporar cerca de 30g de grãos ricos em nutrientes tal como trigo-sarraceno, amaranto, milho painço, quinoa, arroz integral, sorgo e teff, melhorará o valor nutricional do seu pão e obterá “bolinhas saloias” de sabor diversificado, ricas em fibras, proteínas e aminoácidos essenciais e minerais. Fermento caseiro “Casa onde não há pão, todos ralham e ninguém tem razão” versus a Guerra anti-glúten tal como referi anteriormente. Contudo, já os três seres vivos envolvidos no fabrico do pão - o grão, a levedura (Saccharomyces cerevisiae) e o padeiro – trabalham em verdadeira harmonia de modo a levarem a cabo uma complexa teia de alterações químicas e físicas cujo resultado é o produto saboroso e fofo, presente em todas as mesas: o Pão! Tal como referido anteriormente podemos usar um pouco da massa levedada para criar fermento caseiro. Para tal basta colocar uma colher de colher de sopa da massa, após a levedação do pão, num frasco de vidro e cobri-lo com um pouco de farinha. Uso trigo-sarraceno ou outra farinha simples, sem agentes espessantes e levedantes incorporados. As células desta levedura, através dum processo metabólico chamado fermentação, vão consumir os açúcares livres provenientes do amido das farinhas e produzir álcool etílico, um gás (o dióxido de carbono) e vários outros compostos que conferem ao pão o seu fantástico sabor e aroma. O dióxido de carbono (CO2) produzido vai-se acumulando dentro da massa e, se a “liga” tiver a “força” adequada para o reter, vai-se expandindo dada a sua elasticidade. Pode ficar com mais do dobro do seu volume inicial. Nesta massa sem glúten e em particular na farinha Mix B da Shar o agente espessante e aglutinante é a hidroximetilcelulose. O consumo de pequenas quantidades de alimentos fermentados é aconselhado por nutricionistas regulando a flora intestinal. Melhoramos também o sabor do nosso pão e ainda economizamos. Para o efeito, deixa-se a levedar perto do forno enquanto se coze a massa do pão (ou ao sol) e enquanto a cozinha estiver quente. Em 15 a 30 minutos leveda dobrando de volume. Veda-se o frasco com película aderente, na qual se faz 3 furos, e guarda-se num armário escuro e a temperatura amena até ao dia seguinte. Usa-se como fermento (“isco”) de uma próxima fornada de pão, por exemplo, tipo saloio. Se preferir pão ázimo deixe levedar por mais um ou dois dias. Pode congelar e usar após reativar. Para levedar a próxima fornada de pão necessitará de mais tempo do que se usar fermento fresco comprado ou fermento seco ativo. Contudo, confere um sabor mais agradável ao pão final. Ana Pimenta

Critical for our health and well-being, the lymph system functions as our body’s garbage system, picking up toxins, waste, bacteria, and other molecular debris and bringing it to natural trash drop-off sites: the lymph nodes. The lymph nodes are filtering stations that intake and destroy those substances brought in the lymphatic fluid. Lymph nodes and other essential parts of the lymphatic system like the spleen, thymus, lymphocytes, and lymphatic vessels form an intricate network that runs from the tips of our toes to the tops of our heads. Unlike other systems and organs in our bodies that function automatically without us doing anything, the lymphatic system needs our help detoxifying and moving the fluid throughout our bodies.
