I received bok choy in my CSA from Oahu Fresh, and decided to make some Bok Choy in Garlic Sauce. It makes a great side dish, or you can even add it to noodles! Bok Choy in Garlic Sauce Ingredients: 1 lb bok choy 1 T vegetable oil 1 T sesame oil ¼ c water 1 t grated fresh ginger root 2 cloves garlic, minced 1 T oyster sauce 1 T light soy sauce 1 T brown sugar Directions: Rinse and dry the bok choy. Trim off ends; keep white parts separate from green. In a small bowl, mix the oils. In a separate small bowl, mix together the water, ginger, garlic, oyster sauce, soy sauce, and brown sugar. Heat half of the oil mixture in a large skillet over medium high heat. Add the bok choy stems first; stir fry for 2-3 minutes, then add the leaves. Add in remaining oil mixture, and stir fry 1-2 minutes. Place bok choy into a serving dish. Pour the sauce into the skillet and stir constantly until thickened, about 3 minutes. Pour sauce over bok choy and toss. You can find the original recipe here on Allrecipes.com.

Bok Choy is an excellent leafy green vegetable for a stir-fry. Chinese cabbage, also known as Bok Choy, offers two different textures in its leaves from the stems at the root end. The leafy part of the vegetable has a tender, chewy texture while the stems are crunchy, and the flavor is mildly like cabbage with a light bitter mineral taste. In addition to its unique taste, Bok Choy is high in fiber, minerals, and vitamins, which make it a nutritious choice to add to your meal. With this recipe for Bok Choy Stir Fry, we will show you how to prepare a quick and easy Asian-inspired meal that’s delicious and nutritious too. That goes great with Hot Cross Buns.

Adapted from Charlene from Table of Gratitude Bok Choy: Bok choy tends to be really dirty, so it's best to soak the leaves in water before using: Cut off the very ends, separate the leaves, chopped them into ½-inch pieces, and let them soak in a bowl of cold water till the dirt settles. Scoop the leaves out and transfer to a colander to drain. Pat dry with towels — no need to make sure the leaves are completely dry. Sugar: The original recipe calls for 3 tablespoons of sugar in the dressing but I find 1 tablespoon of sugar to be enough. I suggest making it once with the 1 tablespoon of sugar; then adding more (or cutting back) the next time around based on your experience.
