Hoy os propongo unos pasteles que son todo un clásico, los éclairs y los profiteroles (lionesas), yaaa, ya lo se, no soy muy original, la blogosfera está llenita de estos dulces, pero tenía que hacer mi aportación. Son tan ricos, y si alguien te invita a comer, quedas tan bien llevando una bandeja de estos pastelicos. En fin, los adoro, tan sencillos y a la vez tan sofisticados, esa pasta mágica, la pâte à choux, todo un espectáculo ver como sube en el horno, una pasta que ha de ser cocida dos veces, pero que no requiere una destreza especial para hacerla, una vez le pillamos el truquillo...., o también una Thermomix, (para que nos vamos a engañar, la borda), estaremos preparados para hacer un montón de dulces, tartas, cuya base es la pasta choux. Ingredientes: Para la pasta choux 250ml de agua 155g de harina 100g de mantequilla 1 cucharadita de sal 1 cucharadita de azúcar 4 huevos Para la crema pastelera 500ml de leche 100g de azúcar 1/4 cucharadita de extrato de vainilla 1/2 piel de naranja 1/2 piel de limón 4 yemas 45g de maizena 1 cucharadita de Cointreau Para la nata montada (Chantilly) 250 ml de nata 2 1/2cucharadas de azúcar glass 3 gotas de extracto de vainilla Para las coberturas 125 g chocolate negro de cobertura derretido con 20g de mantequilla 100g de chocolate blanco de cobertura derretido azúcar glass Elaboración: Empezamos a prepararando la pasta choux: Con el método tradicional: . Ponemos los 100g de mantequilla y los 250ml de agua en un cazo y llevarlo a ebullición, luego retirar del fuego . Añadimos de golpe, los 150g de harina junto con el azúcar y la sal . Los revolvemos todo y llevamos otra vez al fuego suave hasta que la masa se despegue de las paredes del cazo . Retiramos el cazo del fuego, esperamos un para de minutos que enfríe un poco, solo un poco, e ir añadiendo los huevos uno a uno sin parar de revolver, no incorporar el siguiente hasta que el anterior no esté totalmente integrado . Revolvemos hasta que la pasta esté brillante . Precalentamos el horno 200ºC . Dejamos reposar hasta que enfríe un poco . Pasamos a una manga pastelera y esperamos a que enfríe un poco mas . Ponemos un papel de hornear o mejor un silpat, sobre la bandeja del horno . Con la manga pastelera vamos dando forma a los eclairs de unos 8 a 10cm de largo ( bueno, según gustos) para los profiteroles hacemos montículos del tamaño de una nuez . Metemos en el horno unos 22 min aprox (hasta que estén doradinos) . Dejar enfriar en una rejilla Con thermomix: . Pesamos la harina y reservamos . Ponemos el agua, la mantequilla, la sal y el azúcar y programamos 5min 100º V4 . Agregamos la harina de golpe y programamos 20seg V4 . Dejamos templar unos minutos (10min) . Programar V4 e ir añadiendo los huevos uno a uno . Dejar reposar la masa en la manga pastelera . Continuar como en el método tradicional Para la crema pastelera con método tradicional: . Ponemos a calentar la leche (menos un vaso que lo reservamos para diluir la Maizena) en un cazo con las pieles de los cítricos y el extracto de vainilla, dejamos que hierva y que enfríe unos 20 min . En un bol ponemos las yemas con el azúcar y batimos con unas varillas le añadimos el vaso con la leche y la Maizena . Luego incorporamos las yemas al cazo con leche que llevamos al fuego, batimos bien con un varillas, cuando empiece a hervir, bajamos el fuego y seguimos batiendo hasta que esté espesa, unos 12 min aprox, ponemos la cucharadita de Cointreau y batimos un minuto fuera del fuego . Dejar enfriar en un bol cubierto con un film transparente que toque la superficie Para la crema pastelera con thermomix: . Poner la mariposa en las cuchillas, echar todos lo ingredientes, menos las pieles y el Cointreau . Mezclar 10seg V 3 1/2 . Añadir las pieles y programar 10min 90º V2 . Añadir la cucharita de Cointreau y programar 1 1/2 min V2 Para montar la nata método tradicional: . Ponemos la nata bién fría en un bol que hemos tenído en el congelador, batimos bien con una varillas eléctricas y cuando esté a medio montar, echamos el azúcar en forma de lluvia y el extracto de vainilla . Seguimos batiendo hasta que tengamos la textura deseada Para montar la nata con la thermomix: . Poner la mariposa en el baso que hemos tenído en el congelador o la nevera . Echar la nata bien fría y poner V 3 1/2 sin programar tiempo, cuando esté medio montada incorporar por el vocal el azucar y el extracto, parar la máquina cuando ya tenga la textura deseada (espesa) . Ahora que tenemos todo, solo tenemos que rellenar con crema o con nata, para eso tenemos que meter la crema en una manga pastelera y la nata en otra, abrimos los èclairs y profiteroles por la mitad o hacer unas incisiones y meter la boquilla de la manga, luego pasarlos por la cobertura boca abajo, y los que no lleven, espolvorearlos con azúcar glass

Millionaire’s Bars Base: 125g (1 cup) flour 1 tsp baking powder 1/4 tsp salt 113g (1/2 cup) unsalted butter, room temperature 50g (1/4 cup) sugar Caramel: 1/2 cup unsalted butter, cut into pieces 1/2 cup sugar 2 tbsp light corn syrup 1 (14 oz) can sweetened condensed milk Topping: 3.5 oz / 100g milk or semisweet chocolate, finely chopped 1/2 tsp light corn syrup 30g (2 tbsp) 1/4 cup unsalted butter, cut into pieces 1) Preheat oven to 160C / 325F. Line a 20 x 20 / 8 x 8 inch baking pan with parchment paper. In a small bowl, combine together flour, baking powder and salt. Set aside. In a large bowl, combine together butter and sugar and beat with a mixer until light and fluffy. Stir in the flour mixture and mix just until incorporated. Spread into the pan and bake for 15-18 minutes or until lightly golden brown. Let cool completely. 2) To make the filling, combine together butter, sugar, corn syrup and condensed milk in a saucepan. Heat, stirring occasionally, until the butter in melted and the mixture looks smooth. Bring to boil and cook over low heat, stirring constantly, until the mixture thickens a bit and turns amber color. Spread onto the shortbread layer and let cool completely. Transfer into the fridge for a few hours or overnight. 2) To make the chocolate glaze, combine together butter and corn syrup in a small saucepan and heat until the butter is melted. Remove from heat, add chocolate and stir until melted. Pour over the condensed milk layer immediately. Cool completely before cutting into squares. For the best results, slice only after chilling for a few hours. Recipe adapted from here.

Ingredients: 1 sheet of puff pastry mixture of sugar and cinnamon honey or corn syrup ( i prefer honey) DUST YOUR BENCH W/ FLOUR SO PASTRY WON'T STICK SPRINKLE THE CINNAMON SUGAR MIXTURE AND PRESS USING THE ROLLING PIN SO SUGAR MIXTURE WILL STICK TO THE DOUGH. REPEAT PROCESS ON THE ON THE OTHER SIDE. FOLD AND ROLL OPPOSITE SIDES UNTIL EACH ROLLED SIDES MEETS AT THE CENTER. CUT INTO UNIFORM SIZES. ARRANGE SLICED PALMIERS ON THE BAKING PAN MAKING SURE YOU SET THEM FAR TO ALLOW THE PASTRY TO PUFF. THEN DRIZZLE EACH PALMIERS W/ HONEY ABOUT A TSP PER SLICES. Hos os enseñaremos cómo hacemos nosotras las profiteroles (también llamadas lionesas), una pasta muy versátil que sirve tanto para rellenos salados como dulces... Ingredientes (50 unid.): 125 ml. leche 200 ml. agua ½ c/c sal 1 c/c azúcar 100 grs. mantequilla 150 grs. harina 4 huevos Llevaremos a ebullición la leche en un cazo, junto el agua, la sal y el azúcar. Incorporaremos la mantequilla cortada a daditos (foto 1), removeremos y agregaremos la harina de golpe (foto 2). Mezclaremos con la cuchara de madera hasta que la masa esté homogénea y se separe de las paredes del cazo (fotos 3 y 4). Retiramos del fuego y añadimos un huevo (foto 5), mezclamos bien y cuando esté bien incorporado a la masa, agregamos el siguiente huevo. Repetiremos el mismo paso hasta terminar los huevos. Quedará una pasta brillante (foto 6). Ponemos la masa en la manga pastelera y formamos lionesas del tamaño de una pelota de ping pong sobre una bandeja forrada con silpat o papel sulfurizado (foto 7). Con un dedo mojado con agua, aplanaremos la punta de masa de las lionesas (foto 8), para que al hornearse queden bien redondas de forma. Hornear a 200 grados durante 15-18 minutos. Deben quedar ligeramente doradas. Si disponéis de uno horno convencional, dejad la puerta abierta los dos últimos minutos, para que se vaya la humedad y las profiteroles no se hundan al retirarlas del horno. Dejar enfriar encima de una rejilla. Ya las tendremos listas para rellenarlas a nuestro gusto. Sugerencias de recetas con profiteroles:
