Ready-made mixes: Homemade goodness made simple, one jar at a time. Do you love biscuits and gravy? How about a warm just-made biscuit with butter and honey? The flaky melt-in-your-mouth goodness of a warm homemade biscuit is one of those comfort foods a farm girl just has to enjoy once in a while. The fact is, the words farm girl and biscuits just go together like biscuits and gravy. Surely every farm girl knows how to make biscuits. But sometimes even farm girls run short on time. That's why I like to keep several jars of biscuit mix on the shelf in my pantry. Each jar is an individual batch of biscuits ready for the making. What could be faster than simply dumping a jar of mix into a bowl, adding a couple wet ingredients, then rolling them out and popping them in the oven in mere minutes? But the best part is, each time you reach for one of your homemade mixes, you know it holds that made-from-scratch goodness that just can't compare to a store-bought mix. Today's homemade biscuit mix is easy to make. If you'll join me in the kitchen, we can whip up a several batches in under ten minutes. Are you game? Then grab your apron, girl! Let's get started. How to make Country Biscuit Mix INGREDIENTS 2 cups all-purpose flour 4 teaspoons baking powder 2 tablespoons white sugar 1/4 teaspoon kosher salt In a large bowl, thoroughly combine all ingredients with a whisk. Store mix in a pint-size jar. (You may need to use a tamping tool to tamp it down half way when filling, and again at the top, but it really does fit, I promise). You'll want to make several jars, as each one makes one batch of biscuits. How to use the mix To make biscuits, you'll need the following: 1 jar homemade Country Biscuit Mix 1/3 cup butter, cold and cut into cubes 1/2 cup Greek yogurt 1/2 cup milk 2 tablespoons melted butter (optional for brushing tops) Step 1: Using a fork or a pastry cutter, cut butter into mix. To finish incorporating butter, once the butter is cut in and about pea-size, rub the mix between clean palms until it looks like coarse cornmeal. Step 2: Add the Greek yogurt and milk. Stir the mix just until moist and a ball of dough forms. It will look a bit lumpy, which is fine. Step 3: Place dough on a floured surface. Using a rolling pin (or just pat it out with your hands), roll the dough to 1/2 inch thick. Fold in thirds, and re-roll to 1/2 inch thick again. Use a 1-3/4 inch biscuit cutter to cut out biscuits. Step 4: Place biscuits on a parchment lined baking sheet. Brush butter over the top of each biscuit with a pastry brush, then bake at 425 degrees for 10 minutes, or until golden brown.
