STEELHEAD RAINBOW TROUT GRILLED FISH STEELHEAD RAINBOW TROUT GRILLED FISH Grilled sea-run Rainbow Trout marinated in soy sauce and maple syrup is not only good eating, but it's real easy to cook on your barbecue grill. THE INGREDIENTS YOU'LL NEED: Steelhead rainbow steak -- 3 Maple syrup -- 1⁄2 Cup (8 tbs) Soy sauce -- 1⁄2 Cup (8 tbs) Horseradish sauce -- 2 Teaspoon DIRECTIONS PREPARATION 1) Into a bowl add the maple syrup and soy sauce and mix well 2) Into another bowl, add the fish and the marination reserving about 4 ounces to use for basting later 3) Ensure the fish is coated very well MAKING 4) On a hot grill, heat the reserved sauce and reduce it to half and thickened slightly 5) Also add horseradish sauce to this and allow to simmer 6) Once thickened take off the grill and keep aside 7) Prep the grill by taking some olive oil and rub onto the grills to prevent the fish from sticking 8) Place the fillets of fish over directly over the grill 9) Sprinkle in some black pepper over the fish fillets 10) Cover the fish with the grill lid and cook the fish for about 10 minutes 11) Once 5 minutes are up, baste on some of the reduced sauce over the fish 12) Once the fish is cooked, take it off the grill and place on a plate 13) zip lock pouch, add the bison steak SERVING 14) Serve the fish hot with some boiled vegetables

BBQ Meatballs BBQ MEATBALLS Try these BBQ Pit Boys quick and easy to make Beef Meatballs are slowly simmered in barbecue sauce for some real guuud eatin THE INGREDIENTS YOU'LL NEED: Ground chuck -- 4 Pound Onion -- 1 Small, diced Egg -- 1 Minced garlic cloves -- 2 Garlic powder -- 1⁄2 Teaspoon Fresh ground black pepper -- 1 Teaspoon Salt -- 1⁄2 Teaspoon Parmesan cheese -- 1⁄4 Cup (4 tbs) Bread crumbs -- 1⁄4 Cup (4 tbs) Milk -- 1⁄4 Cup (4 tbs) Barbecue sauce -- 2 Cup (32 tbs) FOR SERVING Sandwich roll --4 (as needed) DIRECTIONS GETTING READY 1. Hell, even a Vegematic will cheat to get a taste of this classic potato dish, bacon included! And it's real easy to do! THE INGREDIENTS YOU'LL NEED: Cheese – 4 cups Sharp Cheddar, Jack or your favorite cheese Butter – 1 stick Half-and-half cream – 1 Quart Smoked Bacon – ½ lb Russet Potatoes – 3 to 4 lbs Green Onions (Chives) Parsley Onion – 1 large Salt Ground Black Pepper 12 Inch Black Iron Skillet Tin Foil DIRECTIONS GETTING READY 1. Chop up your Bacon, Onions, Parsley and Chives 2. Slice your potatoes thin on a slicer or mandolin 3. Set up your grill for indirect heat (hot coals on one side of the grill and no coals on the other side of the grill) – You’re looking for a grill temperature of 350 degrees Fahrenheit. COOKING 4. Place your skillet on the side of the grill with no coals 5. Grease the bottom and sides of the skillet with about 1 to 2 Tbs of butter 6. Build the first layer in the skillet Place a layer of the thin sliced potatoes in the bottom of the skillet Add Salt and pepper to the potatoes Add about 1/3 of the onions to the skillet Add some parsley and chives Add smoked bacon pieces 7. Cover the skillet with foil this will allow the potatoes to cook 15. Place cover on grill – cook time will be about 1 ½ hours 16. After 45 minutes Rotate the skillet 180 degrees so everything cooks evenly 17. After 1 hour Remove the tin foil from the skillet – this will allow the remaining half and half to steam off Add 1 cup of shredded cheese to the top of the potatoes Rotate pan 180 degrees 18. At 1 ½ hours remove skillet from grill FINALIZING 19. Cut and serve with a spatula 20. Add your favorite BBQ meat SERVE AND ENJOY!

Watch one of the BBQ Pit Boys show you how THE INGREDIENTS YOU'LL NEED: Just add 4-5 1lb. cans of your favorite pre-cooked beans, with 1/4lb. thick-cut bacon, 1/4 cup maple syrup, 1 cup brown sugar, 1 cup chopped onion, 1/4 cup molasses, 1/4 cup ketchup, 1/4 cup cider vinegar, 4 tablespoons prepared mustard, to a 3-4 quart black iron pan. Mix the ingredients as shown and then simmer in your covered grill for about an hour, or until the excess liquid renders off. Move the pan opposite the hot coals and then cover the pan for an additional hour or so.

Nonetheless, they're good eating at the Pit THE INGREDIENTS YOU'LL NEED: Bacon -- 1 Pound, regular cut Ground chuck -- 2 Pound Sweet onion -- 6 Large, cored, leftover reserved Spg seasoning/Seasoning -- To Taste Barbecue sauce -- 2 Tablespoon Grated mozerella cheese -- 2 Tablespoon Pickled jalapeno -- 2 DIRECTIONS GETTING READY 1. Preheat grill. MAKING 2. To the ground chuck, add some of the reserved onion leftover, seasoning, mix well. Form into balls, stuff the balls inside the onion. Wrap the onions with bacon slices. 3. Place the onions over grill at a region of indirect heat, cover, cook at 250 - 275F for a couple of hours. When just about to be done, brush some of the onions with barbecue sauce. Grill for another 10 minutes. 4. Place jalapeno pickles on some of the onions and top each onion with cheese, grill until the cheese melts. SERVING 5. Serve with your choice of dip.
