I just purchase a small bag of baby carrots and use the whole bag for this, or use regular peeled carrots cut into about 2-inch chunks. Try to use a good quality olive oil for this. After you have been making this for a while you will know just how much to adjust your salt and garlic, the amounts listed are about the amounts I use when I make this, but all ingredients can be adjusted to suit taste, if you are a garlic-lover use lots of garlic, after cooking the garlic flavor will mellow and will not as strong, so don't be intimated by 8 cloves! This can be made hours in advance and just rewarmed. If you find that the baby carrots are done before the potatoes just remove them to a bowl. I make this very often, it is a simple side dish with lots of flavor, I roast all of my root veggies using the same method and ingredients, rutabagas, parsnips, beets, large chunky size carrots and even sweet potatoes or yams, just peel them and chop into 2-inch pieces (larger size for yams). This is a fantastic side dish, simple and delicious!

Nun wird es dann doch wieder herbstlich in unserer Küche. Wir hatten noch zwei kleine Kalbsfilets zurückgelegt und außerdem tatsächlich mal frische Cranberries bekommen. Also nix wie ran an die Kochlöffel. Die Kalbsfilets bekamen ein Bett aus karamellisiertem Chicorée und Kürbisschupfnudeln, komplettiert wurde das Gericht von einem Cranberry-Chutney. Dies ist ein Gericht, bei dem die Pfannen glühen und am Ende einiges simultan fertiggestellt werden muss. Vereinfachen kann man sich das Ganze etwas, indem man zumindest das Chutney vorbereitet und die Schupfnudeln kocht und zur Seite stellt. Am Ende bleibt einem dann nur die Möglichkeit entweder alls perfekt synchronisiert fertigzustellen oder die unteren Komponenten etwas eher fertigzustellen und im Ofen auf den Tellern warm zu halten. Rezept (für 4 Personen): Cranberry-Chutney: 150 g frische Cranberries 3 EL Balsamico 5 TL Honig 1/2-1 TL Szechuanpfeffer Salz Die Cranberries verlesen, waschen, trocknen und in eine Schüssel geben. Die Beeren mit Balsamico und Honig vermengen und mindestens eine Stunde marinieren. Die Beeren in einem Topf zum Köcheln bringen und so lang köcheln, bis eine marmeladenartige Konsistenz erreicht ist, dabei evt etwas Wasser zugeben. Den Szechuanpfeffer mörsern. Mit dem Pfeffer und Salz würzen und evt mit Honig abschmecken. Szechuanpfeffer hat einen leicht scharfen Geschmack und liefert außerdem Zitrusfruchtaromen, die besonders gut mit Cranberries harmonieren. Kürbisschupfnudeln: 200 g Kürbis (ich hatte Hokkaido wegen der Farbe) 200 g mehlig kochende Kartoffeln 2 Eigelb Salz 6 EL Grieß einiges an Mehl 1/2 TL Muskatblüte Kartoffelmehl Rapsöl Den Kürbis und die Kartoffel schälen, in grobe Stücke teilen und einzeln weich kochen. Den Kürbis mit einem Mulltuch kräftig ausdrücken. Beides kurz ausdampfen lassen und dann mit einer Kartoffelpresse durchdrücken und 10 Minuten abkühlen lassen. Die Muskatbläte mörsern. Eigelb, Muskat, Grieß, Salz und etwas Mehl (4 EL) zur Masse geben und vermengen, dann 30 Minuten ruhen lassen. Auf einer bemehlten Arbeitsfläche unter weiterer Mehlzugabe zu einem glatten Teig kneten. Zwei oder vier längliche Rollen formen (2 cm Durchmesser) und in 1 cm dicke Scheiben schneiden. Die Hände mit Kartoffelmehl einreiben und aus den Scheiben Schupfnudeln formen. Die Nudeln in leicht kochendes Salzwasser geben und warten, bis sie an die Oberfläche kommen. Die Schupfnudeln aus dem heißen Wasser nehmen und in kaltes Wasser geben, dann herausnehmen und zur Seite stellen. Zum Servieren dann nochmals in einer Pfanne in Pflanzenöl anbraten, eventuell nochmals salzen. Karamellisierter Chicorée: 2 Chicorée 3-4 EL Zucker 2-3 EL Butter Salz Den Chicorée in jeweils 4 dicke Scheiben schneiden. Zucker entweder in einer Auflaufform im Ofen oder in einer Pfanne leicht karamellisieren. Butter zugeben und kurz lösen, dann den Chicorée hineinlegen (für 4 Personen braucht man eventuell zwei Pfannen). Den Chicorée von jeder Seite 1 bis 2 Minuten bei geringer Hitze karamellisieren, dann salzen. Kalbsfilets: 4 Kalbsfilets Salz Pfeffer Olivenöl Alufolie Den Ofen auf 160°C vorheizen. Die Filets scharf von beiden Seiten jeweils 90 Sekunden anbraten, dann mit Salz und Pfeffer würzen und in einer Form in den Ofen geben. Etwa 10 Minuten im Ofen lassen (je nach Dicke, am Besten testet man ab und an, wie sich das Fleisch anfühlt). Dann aus dem Ofen nehmen und in Alufolie wickeln. Nach 5 Minuten Ruhe die Filets aus der Alufolie nehmen und sofort servieren. Dieses Gericht ist eine Eigenkreation, aber die Idee für das Cranberry-Chutney kam mir beim Stöbern auf Uwes Blog. Statt Kalb passt hier natürlich auch ein Filet vom Rind oder besonders gut vom Hirsch.
