We absolutely love Thai food but it wasn't a cuisine that I cooked much at home until I got Jet Tila's cookbook "101 Thai Dishes You Need to Cook Before You Die." He does a great job of explaining ingredients and has a shopping list of what you need to stock your pantry. While this recipe is not exactly like an authentic pad Thai, I use an ingredient that has become a staple at our house since I started cooking Jet's recipes: tamarind paste. It really flavors the dish and I've found myself adding it to recipes like BBQ sauce, and I even put it in my corn chowder. This noodle dish is light, fresh and heavy on the veggies for summertime.

I absolutely love pad thai, and making this at home always leaves me reminiscing about trips to Thailand. I made my own vegan fish sauce to use for this recipe and coat the noodles in a deliciously sweet and savory sauce. I made this dish with tofu for protein, added crunch from bean sprouts and peanuts, tang from lime and an extra kick of spice from chili powder!

This is a cracker of a salad! Fresh, crunchy, satisfying with a deliciously sweet/sour/zingy/crazy dressing that will quickly become your new obsession. I used my spirilizer to get the pad thai “noodley” effect, but you could just as easily use a veggie peeler to make ribbons instead. I added left-over roast chicken to mine, but […]
