Adapted from La Vie Rustic by Georgeanne Brennan Feel free to adjust the seasonings. The juniper berries lend a nice flavor, but may be hard to track down, so they can be omitted. I like allspice so I added that. Bay leaf or shallots can be cooked with the pork, if you wish. I chose to add some thyme branches. If you're avoiding alcohol you can use apple cider with a squirt of lemon in place of the brandy or whiskey, and the wine. Note: The original recipe in La Vie Rustic noted that after the pork shoulder is cooked, in step 6, to drain the pork shoulder in a mesh sieve set over a bowl to collect the juices and fat, then shred the meat and set it aside. When the liquid cools and the fat separates, warm the juices in a pan with the shredded pieces of pork shoulder, adding 2 - 4 tablespoons of fat, to make it spreadable. I didn't get any liquid when I made it either time I made it, but if you end up with liquid, you can follow those directions.

My husband and I celebrated our anniversary last year by taking a wonderful trip to Spain. Although we tried a countless number of tapas, our favorite was the croquetas- Spanish croquettes filled with different ingredients. My croquetas use classic Spanish ingredients like salty Serrano ham and nutty Manchego cheese. And to serve with them, I make an aioli using Pimenton de La Vera, a delicious sweet smoked paprika. You may want to make extra croquetas because your guests will gobble them up!
Notes: Fillo (or phyllo) comes in all shapes and sizes these days. The variety I can find, Athens brand, weighs 1 pound and contains two 8-oz bags of 20 sheets each measuring 9 x 14-inches. If your fillo comes in the larger sheets, cut it in half so that it’s roughly 9 x 14-inches. After you cut it, gently roll it up and place it in a ziploc bag.

I fried my panisses in olive oil, as is traditional, in my cast iron skillet and it's a little hard to tell you exactly how much to use but you want enough so that the panisses won't stick. This makes about 36 panisses. A commenter a while back noted they grilled them, which is likely possible. We can't grill in Paris as it's not authorized (I think it's because they are worried about fires), but if you want to give it a go, you can likely brush them with olive oil and cook them that way.
