Préparation : 5 min Cuisson : 5 min Pour 4 personnes : -8 œufs -2 cuillères à soupe de crème -40 g de beurre -Sel, poivre Séparez les jaunes des blancs d’œufs. Fouettez légèrement les jaunes, salez, poivrez. Montez les blancs en neige avec une pincée de sel. Faites fondre le beurre dans une sauteuse sur feu vif. Saisissez les jaunes dans le beurre chaud. Remuez la sauteuse pour vérifier que les jaunes commencent ” à prendre” et ajoutez la crème puis les blancs en neige. Poursuivez la cuisson en agitant la sauteuse régulièrement pour éviter que l’omelette n’accroche. Repliez l’omelette sur elle-même et faites glisser sur le plat de service.
