We found that a hot oven delivered rich, roasted flavor and perfectly rosy meat without overcooking this lean cut. Tying the roast helped ensure even cooking. The roast needed company, and a side dish of small whole red potatoes proved to be the perfect match. To punch up the flavor, we tossed the potatoes with smoked paprika, which added a pleasant smokiness to complement the meat, along with garlic and scallions for a deep, flavorful backbone. The tender meat needed a sauce, so we whipped up a simple yet bold persillade relish, which featured parsley, chopped capers, and minced cornichons.

Fragrant spices and aromatics enliven potatoes and cauliflower in this mainstay of Indian home cooking. Aloo gobi (the name translates to “potato cauliflower”) is one of the pillars of Indian home cooking and is often served as a vegetarian side dish or as a main course with roti or paratha. To ensure that the potatoes and cauliflower tenderized yet retained their shape, we employed a two-part cooking method. First, we shallow-fried the vegetables to harden their exteriors and then removed them from the pot. Then, after blooming fragrant spices and aromatics in oil, we added the vegetables back, along with some water to steam them through. As the water reduced, the potatoes and cauliflower became coated in a concentrated, flavorful paste.
Greek cooks slow-roast vegetables in olive oil and pair them with good bread for a lush, laid-back meal. Briam is a simple but dynamic dish of potatoes, onions, bell peppers, tomatoes, and zucchini bathed in olive oil. We sliced our vegetables ¼ inch thick and strategically layered them in the dish, with potatoes serving as a sturdy base and tomatoes an attractive, browned top. Loosely covering the dish with a foil lid for the first 30 minutes of cooking allowed moisture to evaporate, hyperconcentrating the vegetables’ flavor; we then removed the foil, which encouraged browning, rendering the tomatoes on top slightly collapsed and caramelized but still moist and tender. Warm, room temperature, or chilled, our briam made for a satisfying vegetarian main course, especially when accompanied by crusty bread and a slice of feta cheese.
