While going through the google master, i got hooked immediately to their Palacsinta, the famous Hungarian pancakes or crepes. These crepes are almost as like French crepes.However most of the Central European pancakes are thin pancakes similar to the French crêpe. The main difference between the French and this Hungarian version of this dish is that the mixture for this crepes can be used straight away unlike that of the French crepes which is suggested to be left at rest for several hours. Palacsinta are made by creating a runny dough from eggs, flour, milk, and salt and frying it in a pan with butter or oil. Unlike thicker types of pancakes, palascinta are usually served with different types of fillings and eaten for lunch or dinner.One among the well known crepes of this Hungarian cuisine is the Gundel pancake (Gundel palacsinta), made with ground walnuts, raisin, candied orange peel, cinnamon, and rum filling, served flambéed in dark chocolate sauce made with egg yolks, heavy cream, and cocoa. But the Hungarian pancakes i picked for this blogging marathon is the simplest one, you can fill this palacsinta simply with any spread like apricot or strawberry jam, you can also go for sugar, grounded walnuts or poppy seeds. Some people may also fill their pancakes with sugared cheese, sweetened cocoa or simply with cinnamon powder. These thin crepes are dangerously addictive and my kids enjoyed this cigars shaped like crepes happily for their evening snacks. These crepes can be prepared very easily with simple ingredients,we loved it very much. However i prepared this crepes with eggs, an eggless version can also be prepared if you replace the eggs simply with buttermilk. Recipe Source: Budapestology 2cups All purpose flour 3cups Milk 3nos Eggs 2tsp Sugar 2tbsp Oil Take the eggs in a large bowl, beat with a hand mixer. Add the flour, sugar, milk and oil, beat everything well, the batter should be smooth and runny. Heat a crepe pan or a frying pan, heat some butter on medium heat, drop enough batter, turn the pan until the batter cover the bottom of the pan. This crepe should be thin, when its turns brown, flip and cook on the other side. Remove the crepe from the pan, continue the same process with the remaining batter. Put jam, marmalade or anything over the crepe, spread it and roll it carefully. Sprinkle some sugar in the top. Serve immediately. This weekend has been boring for me cuz my husband is not home, thus there is no cooking as usual. However, after spending a dull half day, I could no longer stay put and decided to do something funnier than aimlessly surfing on the net..and no wonder it could be nothing but baking ! I've found this Italian cookie on seriouseat recently and saved it on my google drive in a list- to-bake category.. though it's unexpectedly made earlier than I thought ! The recipe ( adapted from here ) Ingredients ( make about 40 cookies ) For Cookies 1/2 cup ground almond ,toasted and cooled 2 cups all purpose flour 1/2 teaspoon baking powder 1/2 teaspoon salt 16 tablespoons (2 sticks) unsalted butter, at room temperature scant 3/4 cup caster sugar 1 egg yolk (white reserved) 1 teaspoon vanilla orange zest from 1sunkist orange For Coating 1 egg white (reserved from egg above) 1 1/2 cups sliced blanched almonds Procedures In the bowl, put the ground almond (already toasted and cooled ) with flour, baking powder, and salt. Stir to combine and set aside. In a large bowl, beat together butter and sugar with an electric mixture until fluffy, about 3 minutes. Add egg yolk, orange zest, and vanilla; beat to combine. Add dry ingredients to the bowl and beat until it comes together into a dough. Divide dough into two equal pieces. Form each piece into a 2-inch wide log, cover with plastic wrap, and refrigerate 1 hour. Adjust oven rack to lower and middle positions and preheat oven to 350°F. Line two baking sheets with parchment paper. Cut the first log of dough into 1/4th-inch wide slices. Place egg white in a shallow bowl. Fill another shallow bowl with sliced almonds. Dip each cookie into egg white, then into sliced almonds to coat. Place on baking sheet. Repeat with remaining dough. Bake cookies until golden, about 15 minutes. Let cool 5 minutes then transfer to a wire rack.

Adapted from The New York Times Notes: Plan ahead! This takes time to make and bake and chill — it must chill for at least 4 hours, preferably overnight, before serving. You'll need a 10-inch springform pan for this recipe. Ricotta: You must use whole milk ricotta here. Low-fat will leave the cheesecake with a gritty texture. Calabro brand, sold at Whole Foods, is nice. If you are serving this the same day you are making it, bake it first thing in the morning. As noted above, this can be made a day in advance. Bring to room temperature briefly before serving. Fresh ricotta versus not: Fresh is best. My mother always uses fresh, but keep in mind you will need three pounds, which can get pricey. Most recently I made two using standard grocery store ricotta, and I still thought it was completely delicious, but several commenters have not had success with non-fresh ricotta, so I am advising to use fresh ricotta only here. Cooking times will vary dramatically depending on your oven, the pan you are using for the water bath and what type of fresh ricotta you are using. Start checking at 1 hour and 15 minutes. The cookie crust is more of a cookie dusting than a crust — it melts into the cheesecake making it almost undetectable. It's a subtle touch, but still really nice. Use whatever cookie you like, but I highly recommend the Jules Destrooper butter waffles if you can find them. This is what my mother always uses and what I use now, too. They are made of all good things — flour, butter, sugar, eggs, vanilla, salt, baking soda — and they are delicious to boot. You also could skip the cookie coating all together for simplicity. If you have a Thermapen (highly recommend!), use it to test the temp of the cheesecake, and remove it when it reads 150-155ºF. I have never done this, but the next time I make this, I'm tempted to skip the water bath, and bake the cake on a rimmed sheet pan at 350ºF for about an hour — I've seen a number of recipes that skip the water bath without issue.
